How do I know if a hotel supplier is worth keeping?

Win rate and margin, both reported per supplier. If a source is searched ten thousand times and wins forty bookings at thin margin, it is costing you latency for very little. That is a decision the data should make, not a hunch.

Can I test a supplier before committing?

Yes. A supplier can be connected and restricted to internal users or a single agent tier, so you can compare its rates against your existing sources on real searches before exposing it to your network.

Does the customer see which supplier a rate came from?

Not unless you choose to show it. By default the source is visible to you in the back office and invisible on the front end.
